Will it be possible to do polls for open channels, is that a feature that is planned?

Yes, Polls is supported in both Open Channels and Group Channels from JS v4.5.0 onwards.

Yes, this was enabled couple of months back so the documentation needs to be updated.
Though there is a tight rate limit on voting actions in open channels for handling potential issue from high traffic voting, but we can safely turn on polls feature in open channels without waiting optimisations.
